Yummy Sesame Chicken
Although it has quite a few strange ingredients, it is sooo worth it! I used chicken breast not thigh and normal sesame oil because I didn't have toasted but other than that, I stuck to the recipe. For 1/4 of the whole recipe of chicken and sauce, it is 7.5 points plus in ww. I also had 1/4 cup of rice (because I hate rice but it needed some sort of carb) and that added 1.5 points totaling 9 for the whole yummy meal!

Healthy-ish Broccoli Cheese Soup
Healthy-ish Broccoli Cheese Soup
I forgot to take a picture of the final product but this is just before adding the cheese. It makes 4 nice sized servings. I used 1% milk instead of half and half / skim milk (like they suggested) and I used lower fat medium cheddar cheese from Save On. I would reduce the pepper to 1/4 tsp as the 1/2 tsp was too overpowering. To julienne the carrots, I actually just grated them using a cheese grater. To get the end product, I used a hand mixer to 'puree' it and it worked just fine. If you follow weight watchers, 1/4 of the whole pot (which I counted as 1 serving) is 7 points plus.

New Breaky Sandwich Pan!!
Just found this Wilton pan at my local dollarama and was excited to try it; well it didn't appoint! The recipe that came with the pan makes maple pancakes for the bread part and the egg. You just have to add the bacon/sausage. MMMMM So worth the 3$!
1st day/special student/100th day of school frame!
Today I made a frame that I am going to use when taking pictures of my students on the first day of school, the day that each child is the 'special student' or as we call them in my class, the 'marvelous monkey' and on the 100th day of school. Then, at the end of the year when I am making their scrapbook, their parents will know which picture came from which occasion.
Truffula Trees - Dr Suess
During our persuasive writing unit, my grade 1s had to write to the once-ler persuading him to stop chopping down the truffula trees. Once we completed the unit, I decided to treat them with truffula tree treats! I made them cupcakes, covered them with green buttercream frosting, stuck a pretzel stick in the center for the trunk, covered the tip of the pretzel with a little more icing and then added the cotton candy on top. ADD THE COTTON CANDY right before you serve them as it tends to 'melt' quickly during packing and transport. The kids LOVED them!

Chicken Enchiladas

Mitch's fave recipe of all time..takes a long time to make but I guess it is worth it haha
Yummy, Gluten Free, Sweet Protein Bars
Sweet Protein Bars
2 scoops of Kaizen vanilla protein powder (from costco)
1/2 cup Honey
1/3 cup low-fat Peanut Butter
1 tbsp. Water
3/4 cup Old Fashioned Rolled Oats
1 cup Rice Krispies *I used gluten free brown rice ones!
Mix protein powder, honey, peanut butter and water until creamy. Add oatmeal and Rice Krispies.
Mix thorougly, press into 8 x 8 inch pan. Cut into however many equal squares you'd like and cover with plastic wrap.
Here is the nutritional breakdown:
The TOTAL recipe equals
1201 cals, 31.5g fat, 70.25g of sugar and 93.5g of protein
However many pieces you cut it into, divide those numbers by that. So when I made them, I made 16 pieces. The nutrition for ONE piece (everything divided by 16) was 75 cas, 2g fat, 4.4g sugar and 5.8g protein.
My mom found them too sweet so you could lessen the honey... I liked them with all the sweetness!

My Travel Wall
My travel wall used to be pinned to a corkboard which wasn't working well because the cork board was too small. I went to Micahel's and bought a presentation board, glued the map on with rubber cement and voila! I re-pinned all 56 places I have been fortunate enough to visit and was able to add a title! It is a quote from Hans Christian Anderson that I think is perfect!

Mitch's Nintendo Bday Cake
This is the picture I showed to my great friend Christel for a starting point.
She looks at it and says: "that'll be easy!"
So we made a chocolate cake, covered it in buttercream frosting and then added all the fondant icing. It turned out like this:

Chocolate Chunk Greek Yogurt Muffins

Foil cupcake liners, remove the inner paper lining (because paper
liners tend to stick to muffins!)

Preheat oven to 350 degrees. Line a 12-cup muffin pan with foil cupcake
liners, or spray muffin tin with non-stick cooking spray. Set aside.
In a blender, (or food processor),
mix all of the ingredients together, except for the chocolate chips. Blend
until oats are ground and mixture is smooth.
Place mixture in a bowl and gently
stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into
prepared muffin pans.
Place muffins tins in the oven for 10
minutes. After 10 minutes, remove muffins from the oven (but don’t
shut oven off), and distribute the other half of the chocolate chips on top of
each muffin.
Place the muffins back into the oven
and bake for an additional 2-5 minutes, or until a toothpick comes out clean.
*Note, you could skip this step by
putting all of the chips in the batter, and baking the muffins for 12-15 min
straight, but this method gives the muffins the traditional ‘VitaTop Muffin’
look with the chocolate chips on top!
Cool muffins before removing from
pan. ENJOY!!!

Nicole’s AMAZINGLY DELICIOUS Potato Salad
*makes a huge bowl enough for
10 people
5lbs red potatoes
6 eggs
2-4 granny smith apples (she
uses 2 usually)
Handful of dill pickles
Handful green onions
½ cup mayo
½ cup miracle whip
½ cup pickle juice
Dash of pepper
-boil in salt water until
potatoes are cooked but still a bit firm (about 15 mins of boiling). After 15
mins of boiling, cool in cold water.
-put eggs into a pot with
cold water just covering them. Bring to a boil. Remove from heat immediately
and let them sit in the hot water for 10-12 minutes. Then cool, peel and cut
into cubes.
-while they boil, cut dill
pickles, green onion, and apples (apples and pickles into cubes too)
-when potatoes and eggs are cool,
peel and cut into about 1 inch cubes
* Do no leave the potatoes in
the water for too long as their skin starts to peel off on it’s own…
-add granny smith apples, a handful of dill pickles and a handful of green onions

-mix 1/2c of mayo and 1/2c of
miracle whip, dash of pepper and a splash of pickle juice (about 1/2c) together
-mix into salad and enjoy!
