Instant Mug of Mac N Cheese

Instant Mug of Mac N Cheese (in the microwave)
I have wanted to try this for a while so tonight I thought it would be a nice side dish for the corn dogs. I made Mitch real Kraft Dinner but I tried this recipe using gluten free (corn) pasta. I was very worried after the the first 2 minutes of cooking as the noodles were covered in slime (seems to happen with gluten free noodles) but after 6 minutes, it turned out fine. I added the cheese and milk and put it back in for 2 minutes. It was nice to have some "KD" that was gluten free and made with real cheese instead of orange packet cheese.

Homemade Corn Dogs

Homemade Corn Dogs
Tonight I thought I would try something totally new... corndogs! I don't even like them that much but I knew Mitch did and I thought it'd be neat to try. I halved the recipe and it made enough batter for 7 normal sized wieners; I used the gluten free natural chicken wieners as they had the least calories and fat in comparison to other brands. I did want to try to make it a little healthier so I tried to bake some. I put them in the oven at 400 F for 15 minutes. Some of the coating slid off but they did cook well. They tasted good but the deep fried ones had that extra yummy kick (with a bazillion more calories, haha).

Pre-coated it with cornmeal to help the batter stick better.
Dropped it in oil heated to 350 degrees... only needs 3 minutes to cook!
Doesn't look too tasty but it was good! This is the finished product.

This is the 'baked' version.

Angel Food Cake Roll (No cream!)

Angel Food Cake Roll (No cream!)
I made this for my Dad's birthday as I thought it was a great summer dessert. It was a hit! So light yet full of flavour. I was very afraid to attempt this but following her directions made it easy. Next time I want to try a different flavor! Since the flavor comes from the yogurt, I think you could make many different kinds.

Broccoli Salad

Broccoli Salad
After enjoying the broccoli salad at Press'd, I knew I wanted to duplicate it. This is the closest recipe I found and it works well. I added cheese to mine and did not put in onions. I also lessened the amount of miracle whip in the dressing.

Bite Size Apple Pies

Cute and delicious! I used Pillsbury crescent dough and it worked perfect. We added a scoop of cool whip to top it off.

Parmesan Garlic Roasted Potatoes

So quick, easy and DELICIOUS! I used a 9x9 glass pan and halved the recipe to make 4 servings. I suggest stirring them more often than the one time as they stick to the pan pretty good.

Easy and Delicious Gravy Recipe

1 envelope of dry onion soup mix
1 can of cream of mushroom soup (I used the reduced fat version)
1 3/4 cup of water

Put all ingredients in a frying pan and simmer until thickened. (*When I make meatballs, I add them to the gravy to blend the flavors for a couple minutes).

Healthy Pulled Pork Recipe

Clean Eating Pulled Pork
Tried this tonight! Great flavor but it didn't really 'pull' apart (due to the extremely lean meat). I used 12 very lean, small and pretty thin pork chops and then halved the recipe. It made about 8 servings. I liked how it was so easy to prepare: you put the chops in the slow cooker, make the sauce, pour it over the pork and then leave it in the slow cooker for 5 hours on low.
